Fireside cooking meets modern flair at Binchotan: Bar & Grill, Fairmont Orchid’s hottest new restaurant. Gather the ‘ohana (family) around a shared platter of succulent seafood, wagyu beef and crisp seasonal vegetables, fire-roasted to perfection in the time-honored tradition of robatayaki grilling. Originating from Hokkaidō, Japan, robatayaki reflects the seafaring lifestyle: seasoned fishermen grilling up their fresh catch over the irori, or glowing white coals, served sizzling hot. The aroma is nothing less than divine. Share robata at the terrace or take a seat at the bar where you can order artisan cocktails.
